Black Bean Corn Soup
Serves 4
Ingredients:
-1 TBSP olive oil
-1 Small purple onion, finely chopped
-1 Small green onion, finely chopped
-1 Medium tomato, diced
-1 Medium sweet potato, diced
-3 Stalks celery, finely chopped
-1 15 oz Can of black beans, washed well
-1 8 oz Can of sweet whole corn kernels
-1 8 oz Can of tomato sauce
-2 & 1/2 C. Water
-1 frozen cube of garlic
-1 frozen cube of dill
-2 tsp of onion powder
-Salt and pepper to taste
Directions:
-Add the olive oil to a medium sized pot and turn the fire on to medium. After a minute or two, add the purple and green onion. Lower the heat a little. Saute the onions for about 8-10 minutes, stirring occasionally.
-Add the diced tomato, sweet potato, celery, beans, corn, tomato sauce and water. Add the spices and mix.
-Cook on low-medium flame for about 3-4 hours. Garnish with shredded cheese and serve.
